Arugula Walnut Pesto
Super light and delicious! It has an interesting spin too because it is packed with arugula instead of basil. The arugula gives it a nice, almost peppery taste. For the extra flavor, you will find walnuts in the recipe. Walnuts contain healthy fats and protein as well as avocado, which is there for creaminess.

  1. 4 cups packed with arugula
  2. ¾ cup of walnuts
  3. ⅓ cup of olive oil
  4. 2 Tbsp nutritional yeast
  5. 4-5 cloves of garlic
  6. ⅓ cup of water
  7. Juice of 1 small lemon
  8. ½ avocado
  1. Place all ingredients in a food processor and process until combined and completely smooth.
  2. Serve on whole grain or gluten free pasta.
