Zucchini Pasta
Serves 4
Zucchini pasta is such a delicious, healthy, low-carb dish. Zucchini is a great source of Vitamin A, C and B6, and also minerals such as Iron, Magnesium and Calcium. While preparing zucchini pasta instead of traditional spaghetti, leave the zucchini's skin on for extra fiber. This recipe is such a great choice if you are on a gluten-free diet or trying to lose weight while avoiding refined wheat products such as white pasta.

Ingredients
  1. 4 Medium Zucchini
  2. 1/5 Cup Extra Virgin Olive Oil
  3. 3 Garlic Cloves, Peeled And Thinly Sliced
  4. 1 1/2 Cups Ripe Grape Tomatoes, Sliced In Half
  5. Salt & Pepper
  6. Red Hot Pepper Flakes
  7. A Handful Of Fresh, Small Basil Leaves
Instructions
  1. Cut your zucchini into julienne using a mandolin or sharp knife.
  2. Place in a bowl with the basil leaves.
  3. In a small saucepan, heat the olive oil over medium low heat, then cook the garlic until sizzling.
  4. Add the tomatoes, salt, pepper, and pepper flakes and cook just until the tomatoes begin to soften, about 5 minutes.
  5. Pour the sauce over the zucchini and toss well.
  6. Let sit 5 minutes and then divide evenly between four plates.
  7. Enjoy!
